Distinguish between water-fall model and fountain model?

Waterfall is a project management notion. Each project uses the same model, whether appropriate or not. It’s biggest fault is how long it takes from ‘requirements capture’ to production.
SDLC is a software portfolio management. Many projects collectively managed. The notion is SDLC sets standards for the coding so that new ‘stuff’ does not collide with older. A cohesive whole, as opposed to wild west style results.
The Waterfall project management style went away, mostly, because it takes too long to have something useful in production. The time to develop takes so long, the conclusions and designs made no longer match the changing world. e.g., a waste of time and resources, for a long, long time.
The better model for projects is the construction model. ONLY do what is required. Only schedule what is mandatory. and so on.
